2021 Farm Dinner

*This is also our second farm dinner during the pandemic. We are ideally suited to provide a cathartic escape from the struggles of these times. We do ask that folks mask up any time that they are encountering other people outside of their "bubble".*

Alex Dakers is a local chef and hospitality professional with over 13 years in the food and beverage industry.

Most recently he served as the general manager at Izakaya Meiji and then the head chef at Novo Modern Latin Table.

We are pleased to host Alex’s Yabai Nikkei Farm Dinner here at Hentze Family Farm.
To showcase how Alex’s vision fits our love of “farm to table”. Or as we like to call it out here on the farm, “field to mouth”.

The dinner is $75 per head plus a 20% service charge. All staff share in our gratuity system!

1: A Cold Soba
Traditional Japanese buckwheat noodles with a lime dashi, salmon roe, summer squash, shiso, orange oil
2: Tiradito Nikkei
Oregon seared albacore, cherry tomato, wasabi peas, miso leche de tigre, kale prepared like wakame salad
3: Maze Gohan
sushi rice terrine-style with salmon, pickled ginger, carrots, sesame, fried salmon skin, nori
4: Dengaku Ribs
miso honey glaze, yuzu kosho butter corn, lightly pickled green beans, Japanese potato salad
5: Ice Cream Sundae
brown butter miso syrup, Hentze cherries, vanilla ice cream

Come and join us at a serene, safe, outdoor farm setting. There will be a hand selected paring menu to highlight our featured Chef's menu!
